Japanese Curry With Pot Roast

Curry is one of the most popular dishes in Japan. This recipe is a tasty combination of sweetness and savory spiciness. Adding pot roast makes this dish one of the best accompaniments of rice.

Ingredients

3 pounds chuck roast

2 potatoes

2 stems carrot

2 1/2 tablespoons curry powder

If available:

1 onion

1 bulb garlic

3 ounces ginger

1 green apple

3 tablespoons soy sauce

1 tablespoon sugar

1 cup red wine

2 tablespoons tomato paste

Steps

  1. Cook chuck roast using a recipe such as this.

  2. After chuck roast is done, put a pot on stove under medium-high heat.

  3. Cut onion into small pieces, about 1/2-cm or 1/5-inch. Put into pot. Stir occasionally during the next blending step.

  4. Blend ginger, garlic, and green apple as follows:

    • Peel ginger; chop roughly; put into blender.

    • Peel garlic; put into blender.

    • Peel green apple; cut into manageable pieces; put into blender.

    • Add water and blend.

  5. Pour blended mixture into pot. Cover and cook.

  6. Peel potatoes and carrot. Cut into 1-cm or 1/2-inch slices. Put into pot and stir.

  7. Add curry powder and stir until evenly coated.

  8. Pour red wine into pot in two to three batches. Wait until mixture bubbles in between batches.

  9. Add tomato paste, soy sauce, and sugar. Stir well.

  10. Reduce heat to low. Cover and cook for two hours.

  11. Add chuck roast to pot. Pierce into small pieces or shred into strips. Cover and simmer for one hour.

  12. Serve with rice or your favorite staple.
