Zucchini Gnocchi

Zucchini gnocchi is a summery, quick recipefull of fresh, mouthwatering flavor.

Ingredients

1 pound gnocchi

8 ounces zucchini

8 ounces summer squash

If available:

1 bulb garlic

4 ounces melting cheese

Steps

  1. Cut zucchini and summer squash into 1-cm to 1/2-inch blocks. Put into pan and cook under medium-high heat.

  2. Mince garlic and add to pan. Cover lid.

  3. In a separate pot, boil enough water to cook the gnocchi.

  4. When water starts boiling, add gnocchi.

  5. When gnocchi floats, retrieve and add to pan with zucchini and summer squash. Stir and cook under medium-low heat.

  6. Cut cheese in thin pieces. Turn off heat to pan and spread cheese pieces on top.

  7. Transfer pan to oven. Broil for 10 minutes.

  8. Serve immediately while the cheese is soft and stringy.
