Ingredients

1 pound shrimp

1 pound linguine

1 cup white wine

12 ounces cherry tomato

1 teaspoon salt

If available:

1 onion

1 bulb garlic

1 bunch spinach

1/4 bunch parsley

Steps

  1. In a large pot, boil two liters or half a gallon of water under high heat. This pot will be used for cooking the linguine.

  2. Prepare sauce.

    • While water is boiling, pour white wine into a separate pan large enough to hold all ingredients. Place pan on stove under medium heat.

    • Wash cherry tomato and add to pan.

    • Cut onion into small pieces, about 1/2-cm or 1/5-inch. Add to pan and stir.

    • Mince garlic. Add to pan and stir.

    • Add salt.

  3. Cook linguine.

    • Add linguine to pot once the water boils, stirring occasionally to avoid the pasta sticking to the bottom.

    • While linguine is cooking, peel and devein shrimp. Add shrimp to the pan containing white wine and cherry tomato.

    • When linguine is almost al dente, transfer to pan. Reduce heat to low. Stir well to mix linguine into sauce.

  4. Finishing.

    • Wash spinach while the pasta simmers in its sauce. Add to pan and stir.

    • Roughly chop parsley. Sprinkle parsley onto pan when linguine becomes al dente.

  5. Serve immediately.
