Vegan Tofu Stew

Vegan tofu stew combines the softness of tofu with the umami of shiitake mushrooms and the depth of flavor of fermented black bean (douchi) to make a heart-warming treat.

Ingredients

24 ounces tofu

If available:

1 onion

12 shiitake mushrooms

3 tablespoons fermented black bean

3 ounces ginger

1 bulb garlic

1 pinch salt

3 bulbs spring onion

Steps

  1. Place pot on stove under medium-high heat.

  2. Cut onion into small pieces, about 1/2-cm or 1/5-inch. Drop into pot.

  3. Mince garlic. Add to pot and stir. Cover pot.

  4. Grate ginger. Set aside.

  5. Dice tofu into 1-cm or 1/2-inch blocks. Add to pot and stir. Cover pot.

  6. Cut shiitake mushrooms into thin strips Add to pot and stir.

  7. Chop fermented black bean. Add fermented black bean and ginger to pot and stir. Cover pot.

  8. Cut green onion into thin rings. Set aside.

  9. Once bubbling, reduce heat to low, cover and let simmer for twenth minutes.

  10. Add salt to pot and stir.

  11. Add green onion to pot and stir. Turn heat off

  12. Serve while sizzling hot.
