Sweet And Sour Pork Ribs

Sweet and sour pork ribs is a traditional Chinese dish from the lower Yangtze River region. This recipe is modified from the original to shorten active time.
Ingredients
1 rack pork ribs
9 tablespoons black vinegar
6 tablespoons sugar
If available:
4 tablespoons soy sauce
Steps
Gather all other ingredients into pot except for one tablespoon of black vinegar.
Warm pot under low heat.
Remove membrane from the bone-side of pork ribs
Cut pork ribs between each bone
Pack pork ribs into pot.
Add water to pot to cover all pork ribs.
Cover pot with lid. Cook under medium-low heat simmering for two hours.
Before serving, reduce seasoning broth into a glaze. Add the remaining one tablespoon of black vinegar. Remove lid of pot and evaporate broth under high heat. Turn off heat when broth starts to thicken.
Rest for five minutes before serving to allow the broth to further thicken.
