Slow-roast steak is tender, perfectly-cooked beef with a crisp crust. Roasting slowly at low temperature followed by quick searing pays the highest respect to a quality piece of steak.

Ingredients

1 pound steak

1 teaspoon salt

Preparation

  1. Rub salt evenly over steak.

  2. Rest for twenty minutes to overnight in refrigerator.

Steps

  1. If refrigerated,take steak out and leave in room temperature for ninety minutes.

  2. Roast steak at 65°C (149°F) until internal temperature reaches 49°C (120°F). About three hours depending on thickness of steak.

  3. Sear in pan under high heat for thirty seconds each side.

  4. Enjoy immediately.
