Shakshuka

Shakshuka is a delicious combination of sizzling tomato, onion, eggs, and spices. Every Middle Eastern country claims to have invented this dish.

Ingredients

3 tomatoes

1 onion

2 bell peppers

1 bulb garlic (if available)

4 ounces melting cheese (if available)

4 eggs

2 teaspoons cumin powder

1/2 teaspoon paprika (if available)

1 cayenne pepper (if available)

1/5 teaspoon salt

1/5 teaspoon black pepper (if available)

1/4 bunch cilantro (if available)

Steps

  1. Use a pan that can be put into the oven.

  2. Cut tomatoes into 1-cm to 1/2-inch pieces. Put into pan and cook under high heat with lid covered.

  3. While tomatoes are cooking, cut onion into 1-cm to 1/2-inch pieces. Put into pan and stir, reduce heat to medium when mixture bubbles.

  4. Mince garlic and add to mixture.

  5. Cut open bell peppers, de-seed, cut into 1-cm to 1/2-inch pieces. Put into pan and stir, remove lid and reduce heat further if bubbling too rigorously.

  6. Chop cayenne pepper and add to mixture.

  7. Drizzle cumin powder, paprika, and salt into mixture. Stir well.

  8. Preheat oven to 180-degree C or 350-degree F.

  9. Cut up cheese into thin slices (1/4-cm to 1/8-inch).

  10. Remove pan from stove, cover mixture surface with cheese slices.

  11. Crack eggs on top of cheese.

  12. Place pan into oven. Bake at 180-degree C or 350-degree F for 10 minutes.

  13. Cut cilantro into bits.

  14. Remove pan from oven after 10 minutes. Sprinkle cilantro and black pepper on top of eggs and cheese.

  15. Serve immediately while the cheese is stringy and the eggs runny.
