Sauteed Broccoli Rabe

Broccoli rabe is a tender, bitter green. This recipe brightens the vegetable with lemon juice and red pepper flakes.

Ingredients

1 pound broccoli rabe

3 cloves garlic (if available)

1/5 teaspoon red pepper flake (if available)

1/5 teaspoon salt (if available)

1/4 lemon (if available)

Steps

  1. Blanch broccoli rabe in boiling water for 2 minutes.

  2. Immerse broccoli rabe in cold water for 30 seconds to stop the cooking.

  3. Wring dry broccoli rabe.

  4. Mince garlic.

  5. Saute broccoli rabe in a pan with garlic and red pepper flake for 5 minutes.

  6. Add salt, turn off heat, and sprinkle with lemon juice.

  7. Serve right away.
