Sauteed Broccoli Rabe

Broccoli rabe is a tender, bitter green. This recipe brightens the vegetable with lemon juice and red pepper flakes.
Ingredients
1 pound broccoli rabe
If available:
3 cloves garlic
1/5 teaspoon red pepper flake
1/5 teaspoon salt
1/4 lemon
Steps
Blanch broccoli rabe in boiling water for 2 minutes.
Immerse broccoli rabe in cold water for 30 seconds to stop the cooking.
Wring dry broccoli rabe.
Mince garlic.
Saute broccoli rabe in a pan with garlic and red pepper flake for 5 minutes.
Add salt, turn off heat, and sprinkle with lemon juice.
Serve right away.
