Roast Chicken

Chicken that is roasted crispy on the outside and tender inside. This recipe results in soft chicken breast that at the same time meets food safety standards.

Ingredients

1 chicken

1 tablespoon salt

If available:

3 bulbs garlic

Preparation

  1. Mince garlic.

  2. Mix a teaspoon of salt into minced garlic.

  3. Rub remaining salt over the entire chicken.

  4. Stuff garlic inside chicken.

  5. Cover chicken with saran wrap and marinate for four hours to overnight in the refrigerator.

Steps

  1. Preheat oven to 200°C (400°F).

  2. Bake at 175°C (350°F) until the breast temperature reaches 60°C (140°F). Depending on the size of the chicken, this would take 90 minutes to two hours.

  3. Broil for 5 minutes until the internal chicken temperature reaches 64°C (147°F).

  4. Retrive from oven and rest for 30 minutes.

  5. Carve and enjoy.

Notes

  1. From hygienic considerations, chicken can be consumed safely if the meat temperature reaches 73°C (165°F), or if a temperature of 62°C (145°F) is maintained for eight minutes.

  2. From tastiness considerations, white meat becomes tough beyond 62°C (145°F).

  3. Dark meat is not done until 79°C (175°F).

  4. Internal temperature of the chicken would rise initially after being taken out of the oven. Resting the chicken for 30 minutes after roasting maintains the breast at a high enough temperature for food safety while at the same time keeps the temperature low enough such that the white meat remains moist.
