Melted Eggplant With Turkey

Eggplant melted by heat forms the backdrop for silky ground turkey for tasty, easy-to-make comfort.

Ingredients

2 pounds eggplant

1 pound ground turkey

If available:

1 bulb garlic

1 jalapeno

2 teaspoons salt

Steps

  1. Marinate ground turkey with salt.

  2. Boil half a cup of water in pot under high heat.

  3. Cut eggplant into medium-sized pieces. Put into pot. Cover and let cook.

  4. Mince garlic. Add to pot. Stir and cover.

  5. Split jalapeno into halves. Remove membrane from one half.. Minch and add to bowl.

  6. Uncover pot. Keep stirring until eggplant almost melted.

  7. Add eggplant to pot. Reduce heat to medium.. Stir quickly until ground turkey is cooked.

  8. Serve right away.
