Mediterranean Okra

Mediterranean okra places fiber-rich okra in a down-to-earth tomato stew with onion and garlic.
Ingredients
1 pound okra
1 1/2 pounds tomato
If available:
1 onion
1 bulb garlic
1/4 bunch parsley
Steps
Place pot on stove under medium heat.
Dice tomato into 1-cm or 1/3-inch blocks. Add to pot and cover.
Cut onion into small pieces, about 1/2-cm or 1/5-inch. Add to pot and stir.
Mince garlic. Add to pot and stir.
Cover pot and cook for ten minutes.
Cut okra into 1/2-cm or 1/5-inch slices. Add to pot and stir.
Cook until okra softens, about five more minutes.
If desired, chop parsley roughly and garnish.
Turn off heat and serve.
