Lotus Root Pancake

Lotus root pancake is a Chinese dish made from mixing diced lotus root with meat. Crispiness of lotus root and umami of minced pork, shiitake mushroom, and shrimp will make this dish an instant family favorite.

Ingredients

6 ounces lotus root

6 ounces minced pork

If available:

3 shrimps

3 shiitake mushrooms

2 bulbs green onion

1 teaspoon wine

1 tablespoon soy sauce

1 tablespoon corn starch

1 teaspoon oil

Steps

  1. Marinate ground pork with soy sauce and wine. Stir in corn starch and set aside.

  2. Peel or scrub lotus root thoroughly. Dice into sizes of corn kernel.

  3. Similarly dice the shrimps and shiitake mushrooms.

  4. Cut spring onion into thin rings.

  5. Mix all minced and diced ingredients and blend well.

  6. Flatten mixture into a pancake that fits the frying pan.

  7. Oil pan and place under medium-high heat.

  8. Drop pancake into pan when it is well heated. Fry for one to a few minutes depending on thickness, until the pancake is half cooked through.

  9. Flip pancake, reduce heat to medium-low, and cover. Cook for one to a few minutes depending on thickness, until the pancake is cooked through.

  10. Serve right away.
