Lentil Soup

Lentil soup is simple to make, nourishing, and highly nutritious. Containing plentiful folate, iron, and vitamin B1, lentils are good for your heart.

Ingredients

2 ounces red lentil

1 ounce green lentil

1 ounce brown lentil

2 ounces garbanzo bean

2 tomatoes

1 onion

If available:

1 ounce black lentil

1 ounce black-eyed pea

2 stems carrot

1/4 bunch parsley

Steps

  1. Heat water.

    • Fill a large pot with 1.5 liters of water.

    • Put pot on stove under high heat.

  2. Beans.

    • Measure lentil and pea and bean.

    • Wash and add to pot.

  3. Vegetables.

    • Dice tomatoes into 1-cm or 1/2-inch blocks. Add to pot.

    • Cut onion into small pieces, about 1/2-cm or 1/5-inch. Add to pot.

    • Dice carrot into 1-cm or 1/2-inch blocks. Add to pot.

  4. Cook.

    • Cover pot and cook.

    • Turn heat down to medium-low when soup starts to boil.

    • Let cook for two and a half hours.

  5. Serve.

    • Turn off stove.

    • Sprinkle parsley on top for garnish.

    • Eat to your heart's delight.
