Green Gazpacho

A green take on a traditional Iberian cold soup that is refreshing and cool.
Ingredients
2 1/2 pounds green tomato
1 English cucumber
1/4 onion
If available:
3 cloves garlic
2 tomatillos
1/3 lemon
2 stems parsley

Steps
Clean and peel.
Wash green tomato.
Peel English cucumber, onion, garlic, and lemon.
Blend.
Roughly chop all washed and peeled ingredients.
Blend with blender.
Leave in refrigerator for at least two hours to let ingredients mingle.
Serve.
Roughly chop parsley.
Ladle soup into serving bowls. Garnish with parsley.
Serve while cool and fresh.
