Green Gazpacho

A green take on a traditional Iberian cold soup that is refreshing and cool.

Ingredients

2 1/2 pounds green tomato

1 English cucumber

1/4 onion

If available:

3 cloves garlic

2 tomatillos

1/3 lemon

2 stems parsley

Steps

  1. Clean and peel.

    • Wash green tomato.

    • Peel English cucumber, onion, garlic, and lemon.

  2. Blend.

    • Roughly chop all washed and peeled ingredients.

    • Blend with blender.

  3. Leave in refrigerator for at least two hours to let ingredients mingle.

  4. Serve.

    • Roughly chop parsley.

    • Ladle soup into serving bowls. Garnish with parsley.

    • Serve while cool and fresh.
