Fried Shreds Of Three Kinds

Fried shreds of three kinds is an unassuming but presentable dish. High in fiber and low in calories, it is a worthy complement to more heavy dishes.

Ingredients

5 ounces lotus root

1/2 onion

1 chicken thigh

If available:

5 ounces bean sprout

3 bulbs scallion

1/2 teaspoon salt

1 tablespoon soy sauce

Steps

  1. Cut chicken thigh into 5-cm or 2-inch strips. Marinate with salt.

  2. Heat wok under medium-high heat.

  3. Cut onion into 5-cm or 2-inch strips. Put into wok.

  4. Cut lotus root into 5-cm or 2-inch strips. Put into wok and stir.

  5. Wash bean sprout and set aside.

  6. Cut spring onion into 5-cm or 2-inch strips and set aside.

  7. Put chicken thigh into wok. Stir to ensure uniform heating.

  8. When chicken thigh is half done, stir in bean sprout.

  9. Add spring onion after one to two minutes, before the bean sprout softens.

  10. Add soy sauce to wok and stir. Turn off heat. Keep stirring until soy sauce mixes well with ingredients.

  11. Serve immediately.

Notes

  1. Any of the vegetables can be replaced by any other similar vegetables such as celery.

  2. chicken thigh can be replaced by pork or beef.
