Beet And Cabbage Soup

Beet and cabbage soup uses similar ingredients as borscht except it is not sour. The recipe gives vegetable sweetness with short active time.

Ingredients

3 beets

1/2 cabbage

3 stems carrot

If available:

2 potatoes

1 onion

2 tomatoes

1/5 teaspoon black pepper

Steps

  1. Use a pot that can hold twice the volume of the ingredients.

  2. Fill the pot halfway with water. Put on stove under high heat.

  3. Cut up beets, cabbage, carrot, potatoes, onion, and tomatoes. Put into pot one by one.

  4. Cover pot with lid and cook for two hours. Reduce heat to medium-low once soup bubbles. Cook for two hours.

  5. Turn off heat. Sprinkle black pepper and stir well.

  6. Serve while hot.
